Actually, the oyster sauce here is not for the salmon to simmer in but to server as marinate and cover that the bread crump batter can stick on. Makes a soft and juicy salmon fillet that just so melts on your tongue.

2 tablespoons Oyster Sauce
2 tablespoons Soy Sauce
3 tablespoons Olive Oil
100 grams GF Bread Crumbs
1 pinch Salt

mix the olive oil, soy sauce and oyster sauce into a creamy marinate and add to a wide bowl
spread out a thick layer of bread crumps on a flat plate
wash and dry the salmon fillet, place into the marinate bowl and cover the fillets well all over with the marinate
press the salmon fillets into the batter to achieve a solid and even cover.
